Vinification: Chardonnay is hand-harvested first, destemmed, and macerated on the skins for 5 days before pressing. One week later, Cabernet Sauvignon is harvested and directly pressed. During co-fermentation, a portion of Cabernet Sauvignon from the previous vintage, aged in amphora and demijohns, is added for additional depth and complexity.
Tasting Notes: Bright and refreshing with crisp red berry notes of strawberry and red currant layered alongside floral hints of rose petals. Vibrant acidity and light texture give the wine energy, while flavors of tart cherry, grapefruit pith, and subtle Mediterranean herbs bring complexity. A gentle mineral and slightly saline finish adds freshness and length.
