Vinification: Grapes are hand-harvested, sorted, and destemmed. Syrah (60%) and Mourvèdre (10%) from clay-limestone soils, and Grenache (30%) from well-drained, heat-retentive villafranchian soils, are fermented in concrete vats. Maceration lasts 12 days for Syrah and Mourvèdre, with very few pump-overs to allow gentle infusion. Nothing is added.
Tasting Notes: Earthy and layered with notes of sweet tobacco, roasted mushroom, and black plums. Medium-bodied with soft tannins and a fresh, structured finish, highlighting the mineral and ripe fruit character of the Languedoc terroir.
