Vinification: Certified organic farming, manual vineyard work and horse ploughing. Hand harvested in 10kg boxes, direct pressed, spontaneously fermented, then partially aged in 500L oak barrels for 18 months before bottling. Minimal intervention throughout.

Tasting Notes: Deep and highly digestible, with crushed wild blackberry and dark raspberry, layered with subtle underbrush and earthy notes. Fresh, juicy fruit meets a darker, more savoury character, with a smooth and expressive finish.
