Vinification: Certified organic farming with manual vineyard work. Hand harvested in 10kg boxes, spontaneously fermented in separate tanks, then blended after alcoholic fermentation. Aged in tank for 6 months before bottling with minimal intervention.

Tasting Notes: Bright and fresh, with zesty lemon, white peach, fresh flowers, and crisp green pear. A distinct saline and mineral edge brings freshness and balance to the palate.
