Vinification: Certified organic farming with manual vineyard work. Hand harvested in 10kg boxes, spontaneously fermented with the Grolleau Gris destemmed and the Cabernet Franc undergoing carbonic maceration. 15-day infusion, followed by 6 months of aging in tank before bottling. Minimal intervention throughout.

Tasting Notes: Wild and crunchy, with bright red fruit, blood orange zest, and pink grapefruit. Fine bitters and vibrant acidity give the wine a lively texture, balanced by round fruit, subtle salinity, and a mineral finish.
